Antoinette, our very first vintage of alcohol-free sparkling white wine (alcohol-free sparkling wine) by Fontenille.

Delicate bubbles, notes of citrus, pear, and white flowers—this cuvée is made from Rolle, an emblematic Provençal grape variety renowned for its freshness and elegance. This creation captures the essence of the terroir with irresistible finesse. Antoinette, for all occasions, without moderation. The art of celebrating differently!

Antoinette is produced with the same care and rigor as a classic Fontenille wine: harvests at perfect maturity, precise vinification, and aging on fine lees punctuated by delicate stirring. Only after revealing its full aromatic potential is the wine delicately de-alcoholized, thus preserving its authentic character and freshness.

During the vinification process, the grapes are harvested at optimal ripeness using night-time harvesting, a strategic choice to preserve freshness and allow for low-temperature winemaking in the cellar. Upon arrival at the cellar, the grapes are rigorously sorted to retain only the best. Direct pressing at low temperature and under nitrogen, thus preserving all the purity of the fruit. The juices are carefully cold-set, before beginning fermentation in stainless steel vats on fine lees, punctuated by meticulous and regular stirring.

Dealcoholization is then carried out using reverse osmosis, a gentle process that preserves the wine's intrinsic qualities. With a final alcohol content of less than 0.2% vol, this sparkling wine is then stored at a low temperature before being naturally carbonated through the controlled addition of carbon dioxide. No added flavorings ensure authenticity. A subtle dose of natural sugar and acidity balances the tasting experience, offering perfect harmony on the palate.

Bottling: This wine is produced and bottled in the heart of the Luberon in our Domaine in Lauris.

FAQs

Do your wines contain sulfites?

Our wines contain sulfites, which are naturally present in wine to protect against oxidation and help ensure the good stability of our wines. The amount of sulfites present in our wines is nevertheless very limited, remaining less than 30mg/L on each of our wines, when the legal framework authorizes the presence of sulfites up to 200mg/L. Our wines therefore do not give headaches to people sensitive to this molecule.

Are your wines organic?

Yes, we are very proud to claim our organic farming certification for over 10 years. The transition of our vines was initiated by Frédérique Biousse and Guillaume Foucher following their acquisition of Domaine de Fontenille in 2013 and was carried out smoothly because the older generations of Fontenille winegrowers were already kind to their land.

Do you produce sweet wines?

We do not produce sweet or liqueur wines at Domaine de Fontenille. The wine profiles are rather dry and taut, in keeping with the expression of our limestone and mineral terroir.

Do you produce varietal wines?

We have chosen to focus on the history of the appellation. We believe that respecting the region's tradition of blending several grape varieties is the path to follow. This brings complexity to our wines for the greatest pleasure of your taste buds.
